Â½ cup: Refined flour (Maida)
1 no: Egg
Â¼ cup: Milk
2 tbsp: Oil for cooking the pancakes
1 tsp: Oil
Â¼ tsp: Salt
Water as required
1.Mix flour, salt, egg, oil and enough milk to form a smooth paste. Add the rest of the milk and some water to make a batter that falls smoothly off the spoon in a thick stream. Let it rest for 15 minutes.
2.Put a heavy based frying pan over high heat and add one tbsp of oil.
3.When oil is heated lower the heat, turn the oil around in the pan, and drain off excess oil, leaving the pan only brushed with oil.
4.Increase the heat again, and pour equivalent to about Â¼ cup: batter in the pan and let it spread.
5.Lower the heat, cook on one side till a light brown, then turn over and brown the other side and serve.
